During the fermentation process the fruit pulp is reduced. The fermented cocoa beans are then dried, cleaned and pre-roasted, broken and cleaned once more. The broken beans are alkalised by adding Potassium carbonates to reduce their bitterness, then roasted, cooled down and ground. The result is the cocoa mass. This cocoa mass is pressed until the fat content comes to the desired level and is known as cocoa butter.
